Strawberry Ice Cream

Strawberries. Ice Cream. The wonderful tastes of summer! And what could be better on a hot summer day than strawberry ice cream? This yummy treat is simple to make! The good news is, you can make it with or without an ice cream maker!

How do you like your strawberry ice cream? Smooth? Just puree the fresh strawberries. Do you want a little “strawberry chunk” in your ice cream? Just slice the strawberries!

Ingredients:

Strawberries

  • 16 oz fresh strawberries (1 pint)
  • 1/3 cup granulated sugar
  • 3 tbsp lemon juice

Ice Cream Base

  • 1 cup milk
  • 2/3 cup granulated sugar
  • 2 cups heavy cream
  • 1 tsp vanilla extract

Directions

Wash and stem strawberries. Puree or slice them.

Mix strawberries with 1/3 cup granulated sugar and lemon juice. Place strawberries in refrigerator for at least 2 hours.

Ice Cream Base Mix milk and sugar, allowing the sugar to dissolve.

Drain strawberries, adding juice to milk mixture. Set strawberries aside.

Stir in heavy cream and vanilla. Pour mixture into your ice cream maker.

Mix according to manufacturer’s instructions. Add about half the strawberries to ice cream mixture during the last 5 minutes of mixing (use the other half as a fresh berry topping!)
