Best Strawberry Shortcake Recipe

This might be the best strawberry shortcake recipe you'll ever bake.

At least my friend and her family say so :-)

The original recipe was submitted by a reader of my website and I asked one of my baking friends to try it out for me (she invited us over, but unfortunately we didn't have the time to go).

Because my friend is very creative and talented in the kitchen she never sticks to the recipes given, but adds her own touch. And her bakes are usually a delight. Try it for yourself!

Best Strawberry Shortcake Recipe

Ingredients

  • 2 cups baking flour (if you use self-rising flour, you don't need the baking powder)
  • 1 teaspoon baking powder
  • 3 tablespoons sugar
  • 1/2 cup and 2 tablespoons butter
  • 2 cups whipping cream
  • 1 tablespoon sugar
  • 6 cups strawberries

Directions

Heat oven to 420°F (210°C)

Slice the strawberries.

Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, baking powder 2 tablespoons sugar.

Cut 1/2 cup butter into small pieces and fork into flour mixture with until the butter is well spread.

Add 1 cup whipping cream to flour mixture; stir just until moistened.

Spread batter in two ungreased 8 inch round pans.

Melt the rest of the butter and brush over batter. Sprinkle with 2 tablespoons sugar.

Bake for 12 to 18 minutes, or until light golden brown.

Immediately remove from pans and let cool down.

Whip cream with 1 tablespoon sugar (or to your liking).

Brush whipped cream on dough, then add the strawberries, brush whipped cream, add the second dough, add another layer of whipped cream and finish off with a layer of strawberries.

Makes 12 servings.
