Now is the time to think about your New Year's Resolutions, but also time to slow down and celebrate with your friends and family. As I promised in my last (very short) newsletter, here's a very versatile Strawberry Glaze Recipe, that you can use as a topping for cheesecake, fruit pizza, or any other pie. You could even use it for plain cookies. Wishing you a very happy and successful New Year! Strawberry Glaze Recipe In case you've eaten too much during the Christmas holiday, you can use splenda instead of sugar for the Strawberry Glaze Recipe. Even though I think it's much better with sugar :-)
Ingredients
Directions Crush enough strawberries to make 1 cup pulp. (If you don't know how to make the pulp, get the recipe here.) Place pulp in medium saucepan, add cup sugar and cornstarch. Cook over medium heat 2 minutes or until mixture boils, thickens and is clear, while constantly stirring to avoid burn. Remove saucepan from heat and stir in butter and lemon juice. Cool to room temperature and pour over cheesecake or pie. Makes 12 servings Nutritional Information per serving
