As always in early summer, you receive this newsletter more frequently than normal. I just don't want you to miss any of the delicious strawberry recipes I'm experimenting with.

This recipe is a bit unusual, because the main ingredient is water melon, not strawberries. But see for yourself.


Stuffed Watermelon

Ingredients

  • 1 water melon
  • 1/2 cup (150g)fresh mango (or oranges)
  • 1/2 cup (150g)fresh strawberries
  • 1 banana
  • 2 tablespoons lemon juice
  • 3 oz (100ml) whipped cream
  • 2 oz (60g) chocolate
Serves 4.

Directions
Cut water melon into four pieces, remove pulp and cut into small pieces. Remove seeds.

Cut strawberries, banana and mango into pieces and mix with water melon. Sprinkle with lemon juice.

Melt chocolate in double boiler or microwave. Whip cream and blend with melted chocolate.

Put fruit salad into the melon quarters and top with chocolate sauce. Decorate to your linking with chocolate chips, grates or brittle.

Kitchen Tip

Serve your drinks with melon ice cubes matching the stuffed water melon recipe.

Collect the juice that results from cutting the water melon and pour it into ice cube bags. If the juice is not sufficient, puree some of the water melon pieces and use them as well. Freeze.

The water melon ice cubes are also a great treat for kids on a hot day.
