sometimes I just can't resist a sweet little sin....

We were invited yesterday to a barbecue and my friend offered these delicious coffee-strawberry-jellies (she knows I love strawberries).

She told me they are quite easy to prepare, but I always recommend to test first with your family, before inviting friends over.


Strawberry Coffee Jelly

Indulge in a really outstanding dessert.

Ingredients

  • 6 sheets (or 2 packages) white gelatin
  • 2 cups (500ml) freshly brewed coffee
  • 8 tablespoons sugar
  • 1 cup (250 g) strawberries
  • 1 cup (250 ml) whipped cream

Directions

Soak the gelatin in cold water for about 30 seconds. Take out and squeeze slightly.

Mix the soaked gelatin with hot coffee and 6 tablespoons sugar, until completely solved.

Pour into 4 long drink glasses and cool for at least two hours in the fridge.

Meanwhile blend strawberries with one tablespoon sugar and put on top of the cooled coffee mixture.

Whip cream together with one tablespoon sugar and spread upon the four glasses.

Serve!

Makes: 4 servings
