Easter vacation is over and with it (at least here in the northern hemisphere) snow and winter time. With spring and summer coming quickly, the strawberry season is about to start. If you want to grow your own strawberries it's now the time to work in the garden. As I told you everyone in my family is "strawberry jam addict". Here are three very special strawberry recipes invented by my mother. Try them to give an exotic touch to your jams and jellies. Strawberry Jelly with Champagne
Ingredients
- 2,5 cups unsweetened strawberry juice
Directions Mix with strawberry juice, red champagne and sugar. Pour in fruit pectin. Boil mixture then simmer for 5 - 10 minutes. Stir frequently. When finished take off the foamy top layer of the mixture. Pour the hot strawberry jam in hot sterilized jars. Make sure to fill it up to the top. Clean the jars with a damp towel. Close tightly. After 10 minutes turn around and place jars on the lid. Let cool down, turn around again and store.
Strawberry Lemon Jam with Rum
Ingredients
- 5 lemons
Directions Peel and slice lemons. Keep lemon juice. Slice strawberries. Mix thoroughly lemons and strawberries with sugar and fruit pectin. Boil mixture for one minute. Add white rum, then simmer for another 5 minutes. Stir frequently. When finished, follow directions as above.
Strawberry Kiwi Jam

- 2 kiwis
